As the global population continues to grow and half of all wild life on land and in the sea has been lost over only the last 40 years it is vital we enjoy seafood in a sustainable way. 

This Industry workshop uses a Market visit and classroom discussion to introduce the leading sustainability organisations and their assessment and certification criteria.  You will discuss current trends and key global stock status' leaving better informed with an understanding of seafood sustainability

UPDATE YOUR KNOWLEDGE - SUSTAIN and AQUACULTURE WORKSHOP  - is an opportunity to see, hear and taste the latest on sustainable and responsibly sourced seafood including a number of farmed species. 

The day starts at 6am with an introduction and history of the market followed by an escorted market visit - delivered by our trainers.

Breakfast of MSC manx kippers and toast with tea or coffee is served and a chance to reflect on the product viewed.

Breakfast is followed by short presentations from a couple of experts looking at several species of seafood. Topics include how to identify a sustainble product and more information about the Marine Conservation Society (MCS) and Marine Stewardship Council (MSC) will be covered. Recent presentations have included Mike Warner on behalf of the SAGB (Shellfish Association of Great Britain) CJ Jackson (Brand Ambassador for Hastings Fish) Hans Frode (Norwegian Seafood Council) and an aquaculture specialist who spoke about key information regarding farmed product and its place on todays menus. 

After the presentations, there is a cutting demonstration and tasting of 4 - 5 species covered in presentations - along with some camparative tastings of farmed V wild product..

We aim to send all our guests away empowered and ready to try out new ideas.

For anyone wanting to hone their cutting skills, for an extra fee, there is an opportunity to spend 90 minutes with our blockman immediately after the workshop.

Can I buy fish?

There will be an opportunity to make purchases on the market during the visit. We are able to store a small amount of product in our chiller for the duration of the course. We recommend that you bring cash to make purchases.
